There is nothing to mention about the technology of producing our wines – they are all known by the erudite enquirers and viticulturists. Our wine vinification methods are close to the traditional ones – there are no real secrets even though we are also using modern techniques.
We are sure that the end product, the BIG WINE is not the matter of the cellar. Rather the careful cultivation of the grape and its harvest at the perfect time. Only a little can be added to it in the cellar or the style might be changed but it can be ruined only by carelessness. In order to avoid any possible damages we pay attention to maximal hygiene and methodology – we think that these factors are the most important ones.
Our wines are mellowed or in many cases fermented in wooden barrels. Almost all barrels come in small sizes (225 liter), different ages and toasting, made in Hungary. Since we are a small winery our aim is not making fast produced, well sterilized wines but in all cases are seeking the optimum of the vintage and the type by letting them enough time to develop in the barrels.
Naturally the grape harvest is done manually then the clusters are selected and processed within 2 hours the most.
